“Santoku" means an all-purpose knife, including meat, fish, and vegetables. It is designed to have both features of Japanese Nakiri (vegetable knife) and Japanese Gyuto (meat knife). Being highly convenient and practical, it is most widely used in households. Recommended for those new to Japanese kitchen knives and novice cooks.

Material Details

The ZA-18 was specially developed by Osaka Clad Co., Ltd with Aichi Steel Corp to compete or even outperform VG10. It has similar chemical composition to the VG10, but contains higher Carbon (1.20 vs. 1.05), Chromium (18.0 vs. 15.5), Molybdenum (1.5- vs. 1.20) and Cobalt (1.80 vs. 1.50) for added hardness, durability and corrosion resistance.

Finish Details

Damascus is a laminated steel knife made of several layers of different steel materials. The center of the blade is made of hard steel for sharpness, and both sides are covered with multiple soft steel materials. The multiple steels are metallurgically joined, not by plating or glue. The more the blade is forged, the more complex the ripples become, and the more beautiful the unique grain pattern becomes.
