Aideba knife retains the sturdiness of the Deba knife while being more suitable for delicate tasks. While the Deba knife has a heavy and thick blade designed for cutting bones and large fish, the Aideba maintains those same robust characteristics but with a thinner and lighter blade, making it ideal for more precise tasks and handling the finer parts of fish.

Due to the thinner blade, it is easier to cut without damaging the fish's flesh. It excels in situations that require fine work and delicate cuts.

Material Details

Blue Steel #1 is similar to Blue Steel No.2, but the additional Carbon and Tungsten / Wolfram result in even better edge retention and toughness. The steel is perhaps most commonly seen in high-grade Japanese traditional single-bevel edged knives.

Finish Details

Traditional Kasumi polished finish. Kasumi roughly translated to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.
