Mainly used for vegetables with a flat, rectangular blade and a flat tip. Most user-friendly knife with its thin and wide light blade. Best for cutting Napa and cabbage into strips. Also suitable for peeling, rotary cutting, shaving, and making garnish.

Material Details

The central core material SKD12 (high carbon high chromium alloy tool steel) used for the blade edge is a high-performance steel that, like SKD11, is extremely rich in carbon and alloy elements. It is hardened to around Rockwell 62–64, providing excellent sharpness, long-lasting edge retention, and high wear resistance.

Finish Details

Migaki (Polished) line of knives feature beautiful edge geometry and are quite thin behind the edge and at the spine. They have an excellent cutting feel and are light and feel very nimble and comfortable in the hand.
