Shirogami No.2 has minimal impurities and a very fine grain structure, so it is ideal for fine cutting tools such as Japanese traditional-style knives. Despite being a ‘simple’ carbon steel, Shirogami No.2 has very good edge retention and it is also very easy to re-sharpen. Recommended for first-time users of Japanese traditional-style knives.

The traditional style of Japanese carving has a long history of simplicity and inspiration. Although this technique (Chokin) is gradually disappearing into history, we hope to do our best to let more people feel its beauty.This is a limited edition of our kitchen knives in collaboration with the carver Asamura Takao, whose over 50 years of carving skills make each piece look so spiritual.
